How to transform your SCOBY into a continuous brew Kombucha

That little jar of goop is the beginning of your home brew Kombucha. As long as you care for and maintain your SCOBY you do not need to  rebuy SCOBY with each batch of Kombucha. Your SCOBY will multiply quickly and soon you will be able to share with your friends!

Supplies Needed:

​

1 box of Organic Black Tea Bags

1 Cup Organic Sugar

1 Gallon Filtered, chlorine free water

​

Large Stock pot

1 Gallon glass jar 

Optional: 1 Gallon Drink dispenser container

​

Directions:

**If you do not plan to make Kombucha for a little bit, store your SCOBY in the refrigerator, it will slow the colony's growth. Be sure the SCOBY is always under the liquid level, add a little water to the jar if needed. 

​

Add your SCOBY + the liquid it came with to the 1 Gallon Glass Jar. 

​

To the stock pot, bring to a boil 1 Gallon of water. Once boiled turn off heat and add 8 Organic Black Tea Bags and 1 cup of Organic Sugar. Stir until sugar dissolves. Allow the tea to steep until the water is cool. Adding hot water to the SCOBY will kill it.

Once completely cooled, remove the tea bags from the water, and add the water to the jar with the SCOBY. 

​

Cover the jar with a piece of cheese clothe, secure with a jar ring, string or rubber band. 

Allow the jar + liquid + SCOBY to sit on counter for at least 2 weeks. 

​

After 2 weeks, begin to taste your Kombucha. Once it is at the fermentation taste you prefer it is ready!

At this point you are ready to drink and enjoy, prep your SCOBY for another brew and/or begin your second fermentation. Second fermentation is when you add flavor--- fruits and juices. (more on this to come)
