This is the only daily sandwich (toast or honey-butter delivery system) bread recipe you need. It works up quickly in a stand mixer, doubles fast and bakes in under 30 minutes.
What you need:
2 1/2 cup warm milk or water or a combo of both
2 Tablespoons yeast
1 Tablespoon raw honey or maple syrup
1 Cup sourdough starter discard
6 1/2 Cups all purpose flour
1 tsp salt
Instructions:
Add the warm milk or water, the yeast and honey to a stand mixer. Stir gently with dough hook. Allow the yeast to bloom, about 5 minutes . Add the sourdough discard, flour and salt and with the dough hook, mix and knead in stand mixer for 6 minutes.
If you’d prefer, once the dough has formed a soft, unsticky ball, remove from mixer bowl and hand-knead for 6 or so minutes. Place in greased ceramic bowl, cover and allow to rise to double in size.
Tip: do not allow to over rise as it will over rise also in the baking process and escape the loaf pan! This dough loves to get big!!! It's still tastes wonderful, it just looks a big out of control.
Once doubled, move dough out of bowl and onto a floured counter and divide dough in half. Gently deflate and roll and fold each loaf into shape. Place each loaf in to a greased loaf pan. Cover and allow dough to have a second rise, about 15 minutes.
Preheat oven to 400 degrees. Brush on egg wash if preferred and bake for 25-30 minutes, until golden brown.
Egg Wash::
Lightly beat one egg and a splash of water together. Brush egg wash on top of bread dough for golden brown, slightly crunchy topped bread.
