Energy Dough

It’s not so different from other “energy bite” recipes I’ve seen. The way we rummage through the pantry and toss in what we have on hand may be different! We don’t use a measuring cup or any set amount and that makes it fun for Landon to toss in what he wants.

Today’s ‘Energy Dough’ consisted of:

Non -Instant Oats, about 4 cups

Coconut Oil, about 1/2 cup

Honey, about 8 Tbs

Peanut Butter, about 2 cups

Chocolate Chips, about 1/2 cup

Raisins and Craisins, about 1/2 cup each

Walnuts, 1/2 cup crushed

Flax Seed, about 1 cup

After it is mixed all together we store it in the fridge in a tubberware and serve it by the spoonful.

When Landon is feeling crabby, whiny or tired I offer him a spoonful. I know the protein, healthy fats and natural sugars (besides the chocolate!) will boost his mood almost immediately.
